Making cookies is easy enough I am sure you have made them dozens of times before but when you have an allergy to certain products it becomes a challenge to find a receipe that works for you. I made them using ground almond flour, use a good quality like Red Mill, adding a ½ tsp. xanthan gum to the flour, it acts as a thickening agent and or stabilizer to prevent separation of ingredients.
